Food and Beverage Manager

The Courthouse — New Braunfels, TX

The Courthouse is hiring a Food and Beverage Manager to lead the daily operations of our restaurant and bar. The Courthouse is a fast-growing entertainment venue with pickleball, padel, food, drinks, events, and a high-energy guest experience. We are looking for a hands-on manager who can lead the team, control costs, improve service, and help build a strong operating culture.

This is not a desk-only role. The right person will be active on the floor, visible during peak hours, and comfortable managing both people and numbers.

Key ResponsibilitiesDaily Operations

  • Manage daily restaurant and bar operations.
  • Ensure excellent guest service and a clean, organized, welcoming environment.
  • Be present and active during peak service periods.
  • Support servers, bartenders, hosts, bussers, barbacks, and kitchen coordination.
  • Help solve guest issues quickly and professionally.
  • Make sure opening, shift-change, and closing procedures are followed.

Team Leadership

  • Hire, train, coach, and supervise front-of-house food and beverage staff.
  • Build a culture of accountability, teamwork, hospitality, and urgency.
  • Create clear expectations for staff performance, punctuality, appearance, and service standards.
  • Address performance issues quickly and professionally.
  • Help develop shift leads, bartenders, servers, and support staff.

Scheduling and Labor Control

  • Prepare weekly schedules based on projected sales, reservations, court activity, events, and expected traffic.
  • Make sure staff start times match actual business needs.
  • Control labor costs while maintaining strong service levels.
  • Adjust staffing for slow, medium, heavy, and event nights.
  • Review time punches and help ensure payroll accuracy.

Bar and Restaurant Management

  • Oversee bar operations, including speed of service, drink quality, cleanliness, inventory, and staff execution.
  • Work with kitchen leadership to coordinate service flow between food, bar, and floor.
  • Monitor product quality and consistency.
  • Ensure proper handling of food, alcohol, and cash procedures.
  • Maintain compliance with health, safety, and alcohol service regulations.

Purchasing, Inventory, and Cost Control

  • Monitor food, beverage, beer, liquor, wine, and supply inventory.
  • Help place orders and maintain proper stock levels.
  • Reduce waste, over-pouring, theft, and unnecessary purchasing.
  • Track cost of goods and help improve margins.
  • Work with ownership and leadership to review pricing, menu performance, and profitability.

Events and Promotions

  • Support private events, tournaments, sports watch parties, restaurant promotions, and special nights.
  • Help prepare staffing and service plans for busy events.
  • Coordinate with the racquet sports and events teams when food and beverage service is involved.
  • Help create a smooth guest experience across restaurant, bar, courts, and private events.

Reporting and Communication

  • Provide regular updates on sales, labor, staffing, inventory, guest issues, and operational needs.
  • Communicate clearly with ownership, kitchen leadership, bar staff, and floor staff.
  • Identify problems early and recommend practical solutions.
  • Help create and improve systems, checklists, and training materials.

Qualifications

  • Prior management experience in a restaurant, bar, club, hospitality, or entertainment venue.
  • Strong leadership skills and the ability to manage hourly teams.
  • Experience with scheduling, labor control, inventory, purchasing, and service standards.
  • Comfortable working nights, weekends, holidays, and busy event periods.
  • Strong understanding of guest service and hospitality.
  • Ability to work under pressure in a fast-paced environment.
  • Good communication, organization, and problem-solving skills.
  • Basic understanding of restaurant financials, including labor cost, food cost, beverage cost, and sales performance.
  • TABC and Food Handler certifications preferred, or willingness to obtain them.
  • Experience with Toast, Sling, or similar systems is a plus.

Schedule

This position requires availability during peak business hours, including evenings, weekends, and special events. The schedule may vary depending on business needs, events, tournaments, and seasonal demand.

Compensation

Compensation will be based on experience. The position may include performance-based incentives depending on agreed goals and results.
