Greeting customers as they walk by even if they aren't buying food. While it is not busy, kitchen employees must wipe down the tables and chairs and realign the tables to their designated spots. Interacting with guests, taking orders, cooking food, making cocktails, and keeping the upstairs mezzanine clean are the tasks of the kitchen staff.
