Assistant Director of Dietary Services
Job Description
The incumbent will serve as the second in charge of the food services operation at Shaker Place Nursing and Rehabilitation Center. These duties involve responsibility for administering large scale food service program at the nursing center, which provides nutritious meals for residents. The work is performed under the general direction of the director of dietary services. Supervision is exercised over all food service personnel. Does related work as required.
Responsibilities:
Assists in the direction all phases of the food service operation to assure adequate and efficient food service for residents and employees;
Assists in the establishment of policies and procedures for food service program at the facility;
Assists in the preparation and maintenance of the food service budget;
Assists in the planning, direction, and participation in the in-service training programs including orientation of new personnel and continuing staff development;
Makes routine inspections of the food service operation for compliance with state, federal and facility regulations;
Assists in the recommendation of purchases of new equipment and equipment repairs;
Assists with Interviews of vendors for the purchase of supplies and equipment;
Visits with residents to determine the excellence of meals and service as necessary;
Maintains sanitary hygiene of the food service program;
Consults with dietitian(s) regarding special diet menus;
Assists with coordination of the food service operation with other services in the facility;
Maintains records and prepares reports.
Full Performance Knowledge, Skills, Abilities and Personal Characteristics:
Thorough knowledge of modern methods, materials and appliances used in large scale food preparation and service;
Thorough knowledge of the sanitary aspects of food preparation and service;
Good knowledge of food values and costs;
Ability to plan and direct the work of others;
Ability to plan and direct a large-scale food service operation;
Qualifications (either):
Graduation from an accredited college or university with an associate degree in food service, nutrition, or a closely related field and four (4) years of responsible food service experience in a large-scale/institutional food service program, with at least two (2) years in a supervisory capacity;
OR,
Graduation from high school or a GED and six (6) years of responsible food service experience in a large-scale/institutional food service program, with at least two (2) years in a supervisory capacity.
