Banquet Chef (Full Time) - World Equestrian Center, Ocala FL

Job Summary:
The Banquet Chef will work in partnership with the Executive Banquet Chef to oversee our Banquet Operations team. This individual will supervise and coordinate all food production operations and activities throughout the Banquet operations while maintaining appropriate food and labor cost margins. Will provide strong leadership and foster the development of the culinary and utility staff, will be responsible for developing menus, specifying product standards, controlling and maintaining food inventories and assuring smooth and safe operations as well as managing and adhering to all aspects of the culinary budget.
Primary Responsibilities:
· Ensure the accurate and timely production of catering, dining room, pub and employee meals.
· Ensure superior levels of performance and dependable, friendly service to external and internal clients.
· Periodically inspect work and work areas, and conduct performance reviews for all culinary personnel.
· Direct and train staff on any new food items and follow up to ensure comprehension.
· Order all products needed for all shifts and meals.
· Oversee the scheduling of culinary staff to ensure adequate staffing keeping within budget restraints.
· Direct and assist culinary and utility staff in organizing breaks, ensuring that all work is completed efficiently and according to schedule.
· Responsible for the recruitment of the culinary staff and their ongoing development.
· Teach and ensure complete compliance with all food, safety, and physical standards and policies.
· Write menus for Conference dining, breaks, special events, and amenities.
· Meet with clients as needed to ensure total guest satisfaction.
· Ensure all necessary reports and forms are completed daily and filed in accordance with standards.
· Review the production records during and after every meal to ensure proper completion.
· Conduct and present Monthly Department meetings and departmental Safety programs.
· Any additional functions required by upper management.

Qualifications, Education, Experience, Skills, and Abilities:
· Requires good communication skills, both verbal and written.
· Extensive knowledge of the kitchen, its services, facilities, and equipment.
· Must be detail-oriented with outstanding organizational and communication skills.
· Must possess excellent computational ability.
· Must possess basic computer skills.
· Must have excellent leadership capability and customer relations skills.
· Must possess excellent teaching, coaching, and training skills.
· Working knowledge of federal, state, and local laws governing equal employment opportunity and civil rights, occupational safety and health, wage and hour issues, and labor relations.
· Must be able to perform duties in extreme temperatures.
· Must be able to stand and walk for long periods of time.
· Must be able to exert a well-paced ability to reach other departments of the conference center on a timely basis.
· Must be able to lift up to 50 lbs. occasionally.
· Requires grasping, writing, standing, sitting, walking, repetitive motions, bending, climbing, listening and hearing ability, and visual acuity.
