Job Description
We are seeking a talented and motivated Sous Chef to join the culinary team at Caramá by Wolfgang Puck, a vibrant Italian dining experience at Mandalay Bay Resort & Casino in Las Vegas.
Position Summary:
The Sous Chef supports the Executive Chef in leading daily kitchen operations and delivering exceptional Italian cuisine with consistency, precision, and creativity. This role helps drive service excellence while developing a strong, professional, and team-oriented culinary culture.
Key Responsibilities:
- Support the Executive Chef in overseeing daily kitchen operations and service
- Ensure quality, consistency, and presentation of all dishes
- Train, coach, and develop culinary team members
- Manage ordering, inventory, and product quality
- Monitor labor and food costs while supporting financial goals
- Maintain the highest standards of food safety, sanitation, and cleanliness
- Contribute to menu development and seasonal offerings
- Lead by example with professionalism, urgency, and teamwork
Qualifications:
- Minimum 3 years of experience in a fine dining or upscale culinary environment
- Italian cuisine experience strongly preferred
- Culinary school or formal culinary training preferred
- Strong leadership and team development skills
- Understanding of food costing, labor management, and high-volume service
- Excellent communication, organization, and time management skills
- Flexible schedule, including nights, weekends, and holidays
