Job description:

The Britannia Tearooms in San Diego, CA is looking for an experienced dessert baker to join our team. We are located in Point Loma near Liberty Station & Sports Arena. We are a British tearoom, bakery & restaurant and we make all our baked food items in house. This position is part of a tip pool and also is tipped out separately for catering orders where a separate service charge is applied.


Our ideal candidate must be self-motivated, timely and reliable - we need someone who is experienced with making desserts in a restaurant setting, someone who is highly organized and has good communication skills. A positive attitude & team player mentality is non-negotiable. You would assist our lead baker with the demands of the business by making & plating desserts for our tearoom and our catering orders. This position requires a baker who can confidently make jams, curds, sponge cakes, Swiss merengue buttercreams, fruit tarts, chocolate desserts & biscuits (cookies). We are a small business, so the sweets & savory departments are cross-trained to assist each other as needed. So, we want a baker who can confidently bake desserts, but also take charge on catering orders, make sandwiches for catering orders, help cover the line when cooks call out, etc.


While this position is for assisting the lead baker, this position requires someone competent enough to run the department on weekends or when our head baker has time off. We do permit time off requests, including weekends off, IF both bakers work together to cover each other's time off requests.


Kitchen experience and culinary schooling is required. Approximately 36-40 hours per week. MUST be able to work weekends.


Suggested (desired) schedule: Tuesday through Saturday, days off on Sunday & Monday. Usually, this baker will work from 9:30-5:30, unless there are catering orders that require an earlier start time.

  • Tuesday - Thursday, the baker will work from 9:30 am to 5:30 pm usually.
  • Friday & Saturday, the baker will work from 9-5:30 unless there are catering orders that require an earlier start time.
  • Occasionally, when there are early catering orders, bakers work from 6 - 2:30, 7-3:30 or from 8-4:30.


Benefits: Employee discount, free Shift Meal, PTO. Earn tips in a tip pool - on average, bakers earn $4-8 an hour extra in tips. When working catering, bakers can earn extra money from the catering service charges which are split between anyone helping to get the order ready for the customers.

$20-22 an hour plus tips. Wage rises are available based on performance.


Responsibilities

  • Baking scones, biscuits (cookies), sponge cakes, tarts, etc.
  • Making cakes, doughs, buttercreams, jams, curds, desserts for tearoom service & catering orders, making scone dough, etc.
  • Building desserts & expediting them. Plating desserts for tearoom service (for example banoffee pies, trifles, mousses, fruit tarts, etc).
  • HELPING WITH CATERING ORDERS AND TO-GO'S - this includes making sandwiches, baking off sausage rolls, pasties, scones, desserts, brewing tea, etc. This part of the job is not limited to desserts only, it involves savories.
  • Helping with Gluten Free & Vegan food items - making gluten free and vegan desserts, scones, and sandwiches as needed.
  • Helping to cover the line and assist the savory department if people call out - the savory team also helps cover the dessert bakers when they call out, so we need a team player.
  • Keeping spaces clean, putting away inventory, doing dishes, and other basic kitchen requirements.
  • Must be computer proficient - we use Table Agent for our reservations, and bakers must be able to use the computer to view the reservations on our website. Bakers also type (or re-type) recipes each month, so they must be able to type.
  • Must be able to self-motivate and keep on track without as much supervision on weekends when the head baker is not scheduled. On weekends, assistant will be reporting directly to the General Manager.


Qualifications

  • At least four years baking experience in a business and culinary school training is required. We do extensive training as all our menu items are traditional and made & baked in a British way.
