Job Summary
The Meat Cutter is responsible for cutting, trimming, preparing, and merchandising fresh meat products for sale, ensuring quality, freshness, and presentation standards are met. This role requires knowledge of meat cuts, proper food safety and sanitation practices, and strong customer service skills.
Key Responsibilities
- Cut, trim, bone, and prepare meat products (beef, pork, poultry, etc.) to company specifications.
- Weigh, wrap, label, and price meat products accurately.
- Stock and rotate meat cases to maintain freshness and minimize shrink.
- Maintain a clean, sanitary, and organized work area in accordance with health and safety codes.
- Properly store and handle raw meat to prevent contamination and spoilage.
- Operate and maintain meat department equipment, including saws, grinders, slicers, and knives, safely.
- Monitor inventory levels and communicate reorder needs to the Meat Department Manager.
- Assist customers with special cuts, orders, and questions about meat products.
- Follow all food safety guidelines, including proper temperatures, labeling, and dating.
- Support merchandising and display of meat case to maximize sales and appeal.
- Assist with receiving and checking in meat deliveries.
- Perform other duties as assigned by management.
Qualifications
- Previous experience as a meat cutter or in a similar meat department role preferred.
- Knowledge of meat cuts, grades, and preparation techniques.
- Ability to safely operate meat-cutting tools and equipment.
- Understanding of food safety and sanitation standards.
- Strong attention to detail and quality.
- Good customer service and communication skills.
- Ability to work in a cold environment (walk-in cooler/freezer) for extended periods.
- Basic math skills for weighing, pricing, and inventory.
Physical Requirements
- Ability to lift and carry up to 50 lbs regularly, and up to 100 lbs occasionally.
- Ability to stand for extended periods and work in cold, wet conditions.
- Ability to use sharp tools (knives, saws, slicers) safely and accurately.
- Manual dexterity and hand-eye coordination for precise cutting.
- Ability to bend, reach, and move products throughout a shift.
