We are seeking an experienced and innovative Assistant Dietary Manager to join our culinary team at River Bend Health and Rehabilitation in Asheville, NC. As an integral part of our dietary department, you will play a crucial role in ensuring our residents receive exceptional dining experiences that cater to their nutritional and culinary needs. Primary Responsibilities:

  • Assist with the day-to-day operation of the Dietary Department.

  • Help supervise dietary staff and provide direction during meal preparation and service.

  • Assist with employee scheduling and coverage as needed.

  • Help ensure meals are prepared and served according to approved menus, recipes, resident preferences, and physician-ordered diets.

  • Monitor proper food temperatures, food safety, sanitation, and infection-control practices.

  • Assist with tray line operations and verify accuracy of resident meals, diets, textures, and liquid consistencies.

  • Help maintain proper documentation, including temperature logs, cleaning schedules, production records, and other required dietary records.

  • Assist with inventory, food and supply ordering, receiving deliveries, and proper storage.

  • Monitor kitchen cleanliness and ensure daily, weekly, and scheduled cleaning duties are completed.

  • Assist with staff education, training, and orientation.

  • Provide excellent customer service to residents and address meal concerns or preferences appropriately.

  • Assist with resident meal service, dining room operations, and special events as needed.

  • Support compliance with facility policies and applicable state and federal food service requirements.

  • Assume additional department responsibilities when the Dietary Manager is unavailable.

  • Be willing to cook, work on the tray line, and assist wherever needed within the department.

Preferred Qualifications:

  • Previous food-service experience required; healthcare, long-term care, or senior-living experience preferred.

  • Previous supervisory or leadership experience preferred.

  • Knowledge of food safety, sanitation, and therapeutic/modified diets are preferred.

  • Strong communication, organization, and customer service skills.

  • Ability to work as part of a team and provide leadership in a fast-paced environment.

  • ServSafe certification preferred or willingness to obtain certification.

  • Must be dependable and able to work on a flexible schedule based on department needs, including some weekends and holidays.
