The Role

We're looking for a hands-on cook to run the line on our food truck and handle prep before service. This is a hybrid role — you'll be doing morning/afternoon prep (chopping, marinating, portioning, stocking) and then cooking to order once we're serving customers. Great fit for someone who likes variety, moves fast, and takes ownership of their station from ingredient to plate


What You’ll Do

  • Prepare ingredients daily, including chopping vegetables, portioning proteins, preparing sauces and marinades, and batching recipes according to established recipes and production levels.
  • Cook and assemble menu items to order while maintaining speed, accuracy, and quality in a fast-paced food truck environment.
  • Consistently deliver high-quality food with attention to taste, portioning, presentation, and consistency.
  • Monitor ingredient levels throughout each shift and communicate inventory needs to management to ensure adequate stock.
  • Follow all food safety, sanitation, and health department regulations, including proper food storage, labeling, temperature monitoring, and safe food handling practices.
  • Maintain a clean, organized, and sanitary kitchen before, during, and after service.
  • Manage ticket times and prioritize orders to ensure efficient service and a positive guest experience.
  • Safely operate, clean, and maintain kitchen equipment, including grills, fryers, burners, and other food preparation equipment.
  • Assist with loading, unloading, stocking, and organizing food, supplies, and equipment for daily operations and events.
  • Collaborate closely with the front-of-house team to manage order flow, communicate wait times, and ensure accurate and timely order fulfillment.
  • Support team members as needed and contribute to a positive, collaborative work environment.
  • Perform other duties as assigned.


What You’ll Need

  • Previous cooking experience required, preferably in a food truck, restaurant kitchen, catering operation, or other fast-paced food service environment.
  • Comfortable performing both food preparation and active cooking throughout the same shift.
  • Ability to work efficiently and maintain organization in a small, mobile kitchen environment.
  • Strong knife skills and a solid understanding of fundamental food preparation techniques.
  • Knowledge of food safety, sanitation, and proper food handling practices.
  • Current Utah Food Handler Permit required.
  • Ability to stand for extended periods and frequently lift up to 50 pounds, including food supplies, equipment, and coolers.
  • Dependable, punctual, and flexible to work early mornings, evenings, weekends, and special events as business needs require.
  • Positive attitude with the ability to remain calm, adaptable, and collaborative during busy service periods.
  • Strong work ethic and a team-first mindset with a commitment to delivering high-quality food and exceptional guest experiences.


About the Opportunity

  • This is a full-time, non-exempt position
  • This position requires work to be performed on-site in Kamas, Utah, and is expected to work the majority of Fridays and Saturdays, as these are our busiest days. The remaining two workdays each week will be scheduled at our local Hideout location to support food preparation and production. We are closed Sundays.
